Review

"Entertaining, thoughtful, and educational."

"...Weil illuminates the often confusing and conflicting ideas circulating about good nutrition, addressing specific health issues and offering nutritional guidance to help heal and prevent major illnesses."

Excerpt

It is not easy to find the answers to these questions, especially today when we are bombarded by so much confusing and contradictory nutritional information. My purpose in writing this book is to cut through the confusion.
I have always been interested in food, enjoy eating, and have studied the dietary habits of many different cultures around the world, especially to note correlations with patterns of health and illness. As a result of what I have learned, I use dietary change as a primary treatment in my medical practice, and I teach other physicians to do the same.
Throughout my lifetime I have read many words of medical thinking as to what's good for us and what isn't. Not long ago, I read that olive oil was bad for cardiovascular health. Now I see that it is good. I have seen fad diets come and go and then sometimes come again and go again. As I write, low-carbohydrate diets are enjoying a huge wave of popularity. I have serious reservations about them for long-term use . . . but I don't want to get ahead of myself. I will explain the dangers of those diets in due course.
I never want to promise anything I can't deliver, whether in my personal life, in my medical practice, or in my books. I will not make extravagant promises in this book--not of endless life, nor of miracle cures (though diet and nutrition can play a significant role in what I have referred to elsewhere as Spontaneous Healing).

First line

In the course of my work, questions always come up about food and nutrition, diet and health.

Publisher's note

At last, a book about eating (and eating well) or health -- from Andrew Weil, the brilliantly innovative and greatly respected doctor who has been instrumental in transforming the way Americans think about health. Now Dr. Weil -- whose nationwide bestsellers Spontaneous Healing and Eight Weeks to Optimum Health have made us aware of the body's capacitiy to heal itself -- provides us with a program for improving our well-being by making informed choices about how and what we eat.

Dr. Weil makes clear how an optimal diet can both supply the basic needs of the body and fortify the body's defenses and mechanisms of healing. And he always stresses that good food -- and the good feeling it engenders at the table -- is not only a delight but also necessary to our well being so that eating for health means enjoyable eating.

Eating Well for Optimum Health is a hugely practical and inspiring book about food, diet and nutrition that stands to change -- for the better and the healthier -- our most fundamental ideas about eating.

Annotation

Renowned nutritionist Andrew Weil provides a sensible weight-loss plan, which includes a low-fat, well-balanced diet that may promote optimum health. In doing so, he offers readers basic facts about nutrition and describes the body's chemical reaction to calories, carbohydrates, and fats. He also critiques numerous diets from around the world, pointing out the health risks and benefits that each is associated with. Realizing that eating is pleasurable, he shows readers how to indulge in delicious, nutritious foods that will enhance their dining experiences rather than their waistlines. This is not a quick-fix diet; Weil encourages diners to permanently commit to healthy eating habits. His 85 recipes include Mediterranean Tuna Steaks, Poached Salmon, Potato-Rosemary-Crusted Fish Fillets, and several vegetarian options, like Grilled Tempeh Sandwiches and Vegetable Stir-Fry with Tofu.
